Enjoy eating tasty Mexican corn soup



We always prefer eating soup before dinner. It is the best item that everyone loves before dinner. There is huge number of recipes for soups. Today we will learn to make mouthwatering Mexican corn soup. Here is the recipe of it.

Ingredients:


1.       Boiled sweet corn – 7 tbsp.

2.       Oil – 2 tbsp.

3.       Garlic – 5 to 6 pieces

4.       Chopped onion – 2

5.       Carrot – 1

6.       Salt – as per requirement

7.       Chopped selery – 1 tbsp.

8.       Coriander cumin (dhana jeeru) – ½ tbsp.

9.       Jeera (cumin) powder – ½ tbsp.

10.   Vegetable stock – 3 cups

11.   Pickled jalapeno – 1 slice

12.   Red capsicum baked and crushed – 1

13.   Chopped coriander – 1 tbsp.

How you will make this tasty soup?

1.       In nonstick put oil in it and add onion, garlic, and selery in it and leave it for 2 minutes.
2.       Now add carrot, salt, coriander cumin (dhana jeeru), and cumin (jeera) powder in it and stir it for 2 minutes.
3.       After that add 4 tbsp. corn and pickled jalapeno in it till the carrot becomes soft.
4.       Now grind this in a mixture by adding ¼ vegetable stock in it.
5.       Then add soup in pan and switch on gas. Add sweet corn and red capsicum in it and mix well.
6.       Serve soup in bowl by garnish it with coriander and roasted red capsicum.
